These Cracker Crisps with Mascarpone and fresh Berries make for the perfect crunch. They are easily addictive and should be on rotation all summer long. I also share 4 more appetizer recipes for summer. Check it out in the body of this post.
1½tablespoonspure maple syrup + more ( you can substitute with confectioner sugar or honey)
zest of a lemon
1teaspoonvanilla extract
½cup each mixed berries ( I used a combination of raspberry, strawberry, blueberry, and blackberries)
2packs Lesley Stowe Raincoast Crispcotti ™ peach and pecan
A fist full of fresh mint leaves, chopped
Instructions
Using a hand whisk, mix mascarpone, and cream cheese until it’s light and fluffy. Add the maple syrup, lemon zest, and vanilla extract.
In a separate bowl, combine the berries, drizzle of maple syrup, and chopped mint leaves.
Place Lesley Stowe Raincoast Crispcotti ™ peach and pecan on a serving tray. Add a dollop of the mascarpone mix, add berries, and drizzle with more syrup. Enjoy!

Whipped cream cheese with cherry tomatoes and fresh oregano.
Combine Cream cheese, lemon juice with zest, and honey in a bowl. In a different bowl, combine halved cherry tomatoes with a drizzle of olive oil, a pinch of salt, chopped fresh oregano, and mint. Add a dollop of the cream cheese on the cracker crisp, spoon cherry tomatoes on top, and garnish with more oregano.
