    These Cracker Crisps with Mascarpone and Fresh Berries make for the perfect crunch. They are easily addictive and should be on rotation all summer long.

    We all know that when summer hits, we take the party outdoors. With summer comes the need to spend less time cooking and spending more time outdoors with family and friends. 

    Cold summer appetizer has never looked so good. If you are all about the outdoors this summer and need a few ideas on what to serve at your beach party, I've got a list for you courtesy of Lesley Stowe Raincoast crispcotti ™.

    Here are some of the ingredients you'll need to make this mascarpone snack recipe:

    • Mascarpone cheese
    • Cream cheese
    • pure maple syrup + more : you can substitute with confectioner sugar or honey
    • zest of a lemon
    • Vanilla extract
    • Mixed berries: I used a combination of raspberry, strawberry, blueberry, and blackberries
    • Crackers: I used Lesley Stowe Raincoast Crispcotti ™  peach and pecan
    • Fresh mint leaves

    Peach and Pecan

    This combination of peaches, pecans, and warm spices is brought together into each crispy bite.

    Hand-crafted and made in small batches, these crisps are the perfect additions to your favorite desserts!

    My idea for the beach or outdoor summer party snack has to be anything on crispy crackers. Crackers are so versatile and available in both savory and sweet flavors. When paired with the right ingredients, they are just perfect. I recommend trying my recipe for Cracker Crisps with Mascarpone and Fresh Berries to get you started. You will fall in love with this fresh crispy delight this summer.

    The market is stashed with so many cracker options. And we love how a simple topping on a crunchy cracker can easily become a game-changer. If you are willing to try crackers as a base for an appetizer, we recommend some of these varieties:

    What are some healthy cracker toppings?

    Indeed, there are so many options for healthy toppings on crackers. Here are a few of the Crisp cracker topping ideas that I love on both salty and sweet crackers:

     Herbed cream cheese with cucumber slices and fresh mint:

        Mascarpone with fresh berries

     Whipped cream cheese with cherry tomatoes and fresh oregano.

    Combine Cream cheese, lemon juice with zest, and honey in a bowl. In a different bowl, combine halved cherry tomatoes with a drizzle of olive oil, a pinch of salt, chopped oregano, and mint. Add a dollop of the cream cheese on the cracker crisp, spoon cherry tomatoes on top, and garnish with more oregano.

    Hummus and carrot:

    Spread a thin layer of your favorite hummus on cracker crisps, add a few slices of thin carrot slices, and a sprinkle of salt and ground black pepper.

    Best appetizer for an outdoor party

    For me, the appetizer should excite your taste buds for the main course. A few of my favorite outdoor party appetizers are cracker-based.     Equipment

    Ingredients

    • 8 . oz Mascarpone cheese
    • 3 . oz cream cheese
    • 1½ tablespoons pure maple syrup + more ( you can substitute with confectioner sugar or honey)
    • zest of a lemon
    • 1 teaspoon vanilla extract
    • ½ cup each mixed berries ( I used a combination of raspberry, strawberry, blueberry, and blackberries)
    • 2 packs Lesley Stowe Raincoast Crispcotti ™  peach and pecan
    • A fist full of fresh mint leaves, chopped

    Instructions

    • Using a hand whisk, mix mascarpone, and cream cheese until it's light and fluffy. Add the maple syrup, lemon zest, and vanilla extract. 
    • In a separate bowl, combine the berries, drizzle of maple syrup, and chopped mint leaves.
    • Place Lesley Stowe Raincoast Crispcotti ™  peach and pecan on a serving tray. Add a dollop of the mascarpone mix, add berries, and drizzle with more syrup. Enjoy!

    Mascarpone is one of those versatile ingredients that are still unknown to many. It can be used in cheesecakes, topping a cracker, and even toast with Nutella. In addition, it has a loose velvety texture that can go with literally anything that uses cream cheese.
