- hand whisk
- 8 . oz Mascarpone cheese
- 3 . oz cream cheese
- 1½ tablespoons pure maple syrup + more ( you can substitute with confectioner sugar or honey)
- zest of a lemon
- 1 teaspoon vanilla extract
- ½ cup each mixed berries ( I used a combination of raspberry, strawberry, blueberry, and blackberries)
- 2 packs Lesley Stowe Raincoast Crispcotti ™ peach and pecan
- A fist full of fresh mint leaves, chopped
- Using a hand whisk, mix mascarpone, and cream cheese until it’s light and fluffy. Add the maple syrup, lemon zest, and vanilla extract.
- In a separate bowl, combine the berries, drizzle of maple syrup, and chopped mint leaves.
- Place Lesley Stowe Raincoast Crispcotti ™ peach and pecan on a serving tray. Add a dollop of the mascarpone mix, add berries, and drizzle with more syrup. Enjoy!
