Combine Cream cheese, lemon juice with zest, and honey in a bowl. In a different bowl, combine halved cherry tomatoes with a drizzle of olive oil, a pinch of salt, chopped oregano, and mint. Add a dollop of the cream cheese on the cracker crisp, spoon cherry tomatoes on top, and garnish with more oregano.

Hummus and carrot:

Spread a thin layer of your favorite hummus on cracker crisps, add a few slices of thin carrot slices, and a sprinkle of salt and ground black pepper.

Ingredients

  • 8 . oz Mascarpone cheese
  • 3 . oz cream cheese
  • tablespoons pure maple syrup + more ( you can substitute with confectioner sugar or honey)
  • zest of a lemon
  • 1 teaspoon vanilla extract
  • ½ cup each mixed berries ( I used a combination of raspberry, strawberry, blueberry, and blackberries)
  • 2 packs Lesley Stowe Raincoast Crispcotti ™  peach and pecan
  • A fist full of fresh mint leaves, chopped

Instructions

  • Using a hand whisk, mix mascarpone, and cream cheese until it's light and fluffy. Add the maple syrup, lemon zest, and vanilla extract. 
  • In a separate bowl, combine the berries, drizzle of maple syrup, and chopped mint leaves.
  • Place Lesley Stowe Raincoast Crispcotti ™  peach and pecan on a serving tray. Add a dollop of the mascarpone mix, add berries, and drizzle with more syrup. Enjoy!
