Here are the main ingredients needed to make this coconut drink:

- Tequila: You can use coconut-flavored Tequila for the utmost coconut-y flavor or regular one. Whatever you decide, make sure to use a good-quality one.
- Pineapple Juice: I am using a “sugar-free” Pineapple juice for this recipe. You can use the juice from a fresh pineapple, canned, or buy 100% pineapple juice from your favorite grocer. I love the Dole canned pineapple for its flavor and single-serving size.
- Cream of coconut: The cream of coconut is what makes this drink super creamy, sweet, and nutty. Shake vigorously before serving.
- Grand Mariner: The Grand Mariner adds a hint of bitterness, thanks to the added cognac and bitter orange flavors.
- Lime Juice: Tanginess from the lime juice creates a perfect blend with the sweetness of the pineapple juice and coconut cream.
- Desiccated coconut: Desiccated coconut is perfect for rimming the serving glasses. It will also add a unique texture to the drink, but it’s completely optional.

- Make it a mocktail: You can make it by just removing the alcohol. Add orange juice if you like, then top it off with sparkling water or club soda (please note the drink will curdle because of the cream).
- Try Rum: Rum instead of tequila will give the drink a more tropical taste.
- Spice it up: You can add Tajin to the mix or rim the glass with lime and chili for that extra kick!
- Use Coconut Milk instead of coconut cream: The coconut milk will make the drink lighter. Be sure to add a sweetener.
- Make it in a pitcher: Multiply the recipe by the number of guests you are expecting. A few minutes before serving, add ice, slices of lime, and all the ingredients to a pitcher and stir before serving.

- Cream of coconut curdles when mixed with an acidic ingredient like lime. If the curdling bothers you, add the lime just before serving. You can equally scoop out the cream and use the liquid (refrigerate the can overnight, don’t shake before opening for best results).

Ingredients
- 3 oz tequila good quality
- 6 oz pineapple juice
- 6 oz cream of coconut from one 15 oz can
- 2 oz Grand Marnier optional
- 2 oz lime Juice from 3-4 limes
- Ice cubes
- Desiccated Coconut finely shredded (optional)
Instructions
- Add shredded coconut flakes or salt flakes to a small flat plate.Desiccated Coconut
- Run a lime wedge around the rims of 2 short glasses.
- Dip the glass into the plate with coconut or salt. Set aside.
- Pour all the ingredients into a shaker with ice. Give it a nice shake until it’s chilled.3 oz tequila, 6 oz pineapple juice, 6 oz cream of coconut, 2 oz Grand Marnier, 2 oz lime Juice, Ice cubes
- Add more ice to each prepared cocktail glass, then strain the drink evenly between each glass.
- Garnish with lime or pineapple crowns.
