Reasons to Love this High-Protein Banana Nut Bread Recipe:
I make this on a random weekday, and somehow it's gone before the weekend even shows up. EVERY TIME
- It's not only easy to make, but it's also great to make in batches.
- Great for the whole family. This banana bread with cottage cheese doesn't last more than 2 days in my home. Think lunch boxes or an after-school snack.
- Versatile. Add your favorite nuts or fruits (fresh or dehydrated) to make it your own. Be mindful tho: if adding fresh fruit, any leftovers should be refrigerated, as this might make the bread go bad. Trust, I learned the hard way.
- It stores and freezes well. Toss a slice in the refrigerator overnight to thaw, then reheat in the microwave for about 10 seconds for a "freshly baked" aroma and texture.
📃Ingredient Description
Here are a few of the key ingredients needed to make this homemade banana nut bread with high protein:

- Bananas: Use overripe bananas with brown spots. The riper the better. They're sweeter, softer, and honestly doing most of the heavy lifting here.
- Flour: I used all-purpose flour; it keeps things simple. See my notes below if you have diet restrictions.
- Butter: Melt the butter; sometimes I brown it if I'm feeling fancy. It adds that warm, nutty flavor that makes people pause mid-bite.
- Cottage cheese: This ingredient might sound unexpected, but it works. The acidity in the cottage cheese helps the baking soda bind properly, yielding a soft, tender crumb. If you're not a fan of the curd, just blend it.
- Protein powder: This is where things shift a little. It makes the bread more filling and gives it a slightly denser, but still tender texture.
- Eggs: This acts as a leavening agent and helps to produce a fluffy bread.
- Sugar: I used granulated sugar for this recipe as it yields a lighter crumb. The banana bread will be a bit more airy, with slightly crispier edges, compared to one made with brown sugar.

💭Variations and Substitutions
Honestly, this recipe is pretty forgiving. You can play around with it.
- Swap the flour for a gluten-free blend such as almond flour, oat flour, coconut flour, or even whole wheat if that's your thing. Just adjust liquids when needed.
- Add dried fruits like cranberries, raisins, or chopped apricots for added sweetness.
- Walnuts and pecans are my go-to. But pumpkin seeds, coconut flakes, and even mixed nuts would do.
- Use any neutral-tasting oil instead of butter if that's what you have. The same amount the recipe calls for.
- Sour cream, cream cheese, or yogurt is another great option for a richer slice.
- For a deeper flavor, use brown sugar, maple syrup, or honey. Brown sugar especially brings that otherworldly, rich, almost caramel flavor and a darker loaf.
It's important to note that when making substitutions in recipes, the texture and flavor may be slightly different. However, these substitutes are the best options for changing the original recipe.
📝Step-by-Step Instructions
Detailed instructions are outlined in the recipe card below, but here are a few steps with visuals to guide you:

- Step 1: Cream together the sugars and the banana in a large bowl. Use a masher or a fork to mash the banana. Mix with a spatula or whisk until the sugar has dissolved.
- Step 2: In a separate bowl, whisk together the egg, cottage cheese, vanilla, and melted butter. Blend if you want it silky.

- Step 3: Combine the flour, protein powder, baking soda, allspice, and salt in a medium bowl. Gently pour into the bowl with the wet ingredients.
- Step 4: Mix until just combined. Be careful not to overmix.

- Step 5: Fold in the walnuts or pecans to combine. Transfer the batter into a lined 9 x 12 loaf pan.
- Step 6: Bake until cooked through. Bake until a toothpick comes out clean. Cool completely before serving.
Top Tip
If you're going to make this recipe, make sure to follow this top tip!
- Making banana bread might sound easy, but having some tips in mind will help you make it without fail, over and over. Here are some tips to guide you:
- Measuring the flour with a kitchen scale is the best way to go. The measurement is accurate and cancels out any gaps that might result from measuring with a cup, especially when the flour is scooped with the measuring cup rather than added to it.
- Feel free to blend the cottage cheese if small curds are not your preference.
- Use overly ripe bananas, as this would yield a perfect, subtly sweet bread
- Don't use too many bananas, as this could make the bread sink.
- Overmixing the batter can lead to tough bread. Mix just until it's combined.
- Check for doneness so the bread doesn't dry out. Depending on your oven settings, it's always recommended to start checking for doneness using a wooden skewer or toothpick at the 50-minute mark.
- I know it's tempting to want to dig in, but you've got to allow the high-protein nut bread to cool completely before slicing; that way, the bread doesn't fall apart. Remember, it is still setting up inside, even if it smells ready.

✅Recipe FAQS
Yes! Banana bread actually tastes even better the next day as the flavors settle and deepen. Bake it a day in advance, let it cool completely, then store it properly for the best texture.
Keep it in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze slices for up to 3 months. Just warm it slightly before serving to bring back that fresh-baked feel.
This usually comes down to overmixing or too much flour. Overmixing develops too much gluten, while excess flour dries things out. Mix just until combined and measure your flour carefully for a soft, tender crumb.
